Spipwrecked Rice (from VBF 2018)
* 1 1/2 cups chopped cooked ham
* 1 small white onion, chopped
* 1 red bell pepper, seeded and chopped
* 4oz. garlic olive oil
* 2 eggs, lightly beaten
* 3 cups cooked rice
* 1 cup pineapple bits
* 4oz. soy sauce (more of less for taste)
* 4 chopped green onions
Instructions:
1. Preheat a large skillet or wok to medium heat. Pour 1/2 oil in the bottom. Add white onion, bell pepper, and cook until tender
2. Slide the onion and pepper to side, and pour 1/2 oil and beaten egg onto the other side. Using spatula, scramble eggs with the vegetables.
3. Add the chopped ham and the rice to the veggie and egg mixture. Pour the soy sauce on top. Stir and fry the rice and veggie mixture until heated through and combined. Add pineapples and chopped green onions.
